Matcha is the vibrant green powdered tea used in traditional Japanese tea ceremonies. Matcha is cultivated by covering tea plants with bamboo mats several weeks prior to harvest, increasing the chlorophyll content. The harvested leaves are dried and ground into matcha powder. The tea powder is rich in green tea polyphenols, catechins, chlorophyll, vitamins C, E, B1, B2. Carotene and protein. Matcha is becoming increasingly popular  because of its versatility and health benefits. Matcha's flavour blends well in dairy-based recipes and its powder form makes it easy to work with.
