Traditional Method of Serving Absinthe:
Pour the absinthe into a glass until it is about 1/5 full.  Place a sugar cube over the holes on an absinthe spoon and rest the spoon over the glass.  Now slowly pour cold water over the sugar cube, allowing it to flow into the glass until the ratio of water to the absinthe is 4 to 1.  Stir the contents of the glass and watch as the water mixes with the absinthe, the green liquid turns a milky white in a process called "louching".  The louching occurs because as the sugary water dilutes the absinthe, the essential oils in absinthe come out of solution, as they are insoluble in water.
Czech Method:
Begin with the sugar cube on the spoon and then pour the absinthe over the sugar cube into the glass instead of straight into the glass.  The sugar cube is now set alight and the melted sugar is allowed to flow into the glass.  Next add the water to the desired ratio and stir.  The caramelized sugar adds to the flavour and the presentation is impressive!
