Sugar Maple, Bird's Eye Maple
Acer saccharum
(This plant is not on the Australian Noxious Weed List.)
A native of North America where it prefers light, rich soils in a protected, shady position when young but full sun when mature. It is not happy in drought but is frost hardy.
A deciduous tree growing to a height of 40 metres with a spread of 10 metres The stem is stout, with greyish bark, vertically fluted; the leaves are deep green above with a silvery underside and are deeply palmately divided into five lobes with serrate margins. The flowers are greenish-yellow occurring in erect corymbs.
Sugar is acquired in large quantities from the sap of this maple and it is considered superior to cane sugar. A tree of average size produces from 80 to 180 litres of sap per season. The Iroquois Indians worshiped the Sugar Maple as a special gift from the Creator and carried the sap in duck and quail egg shells on their journeys. The Winnebago and Chippewa Indians made sweets for the children by boiling the sap and pouring it into the snow where it set.
