Yan-Kit-So's Chinese Cookery

Chinese cuisine requires very few herbs and no dairy products. If you have ginger, garlic and spring onion - the Chinese kitchen trinity - soy sauce, salt, pepper and sugar, as well as cooking oil and a little cornflour, you are in business to turn your main ingredients into Chinese dishes. Add to these a few things such as dried Chinese mushrooms, dried shrimps, fermented black beans, star anise, Sichuan peppercorns and five-spice powder, a little rice wine or sherry, some tapioca, cornflour or potato flour, and you are well set up to make very sophisticated Chinese dishes.

Yan-kit So was born in Zhongsham, China and raised and educated in Hong Kong and later in London, where she gained a PHD in history. She has also lived in India and the USA. Yan-kit is a well-known Chinese cookery expert and the author of numerous articles and two books on Chinese cuisine. Her Classic Chinese Cookbook won both the Andre Simon award and the Glenfiddich award for the most outstanding cookery book of 1984.

The Wok Cook Book was published a year later. She is also renowned as a demonstrator of Chinese cooking techniques.
