L'uva raccolta e selezionata nel piccolo vigneto denominato “Vigneto Alto” era veramente speciale. Rimasta a riposo dalla metà del mese di settembre 2000 fino alla metà del mese di gennaio 2001, ha raggiunto un appassimento molto elevato.
Fino a raggiungere 27/28 gradi babo. (circa 300 gr/l di zuccheri) dopo una fermentazione di 55 giorni con frequenti rimontaggi veniva svinato e posto in vasca d'acciaio per 10 giorni.

Travasato e messo in botti nuove da 12 – 25 ettolitri di rovere di slavonia e francese, con un residuo zuccherino di 40gr/l.
Qui vi rimase per 30 mesi sulle proprie fecce dove terminava la fermentazione molto lentamente (due anni).
Travasato ed assemblato è stato messo in bottiglia nel dicembre del 2003. Normalmente rimane ad affinare per 4 mesi prima della vendita.

Di questo vino sono state prodotte circa 6.000 bottiglie
